<trans-abstract xml:lang="en"><p>The impact of meat products and alcohol on uric acid (UA) levels is well known, whereas the effect of other food products has been studied insufficiently. Current studies indicate that the consumption of non-meat products, including dairy products, cereals, legumes, and vegetables, may lead both to a decrease in UA levels and to its accumulation. For example, dairy products may promote UA excretion, whereas some plant-based foods and beverages, due to their high purine and fructose content, increase the risk of gout flares.</p><p>This paper considers current data on the influence of various non-meat products on purine metabolism and their role in the development and prevention of gout.</p></trans-abstract><kwd-group xml:lang="ru"><kwd>гиперурикемия</kwd><kwd>подагра</kwd><kwd>мочевая кислота</kwd><kwd>молочные продукты</kwd><kwd>овощи</kwd><kwd>злаки</kwd><kwd>бобовые</kwd><kwd>питание</kwd></kwd-group><kwd-group xml:lang="en"><kwd>hyperuricemia</kwd><kwd>gout</kwd><kwd>uric acid</kwd><kwd>dairy products</kwd><kwd>vegetables</kwd><kwd>cereals</kwd><kwd>legumes</kwd><kwd>nutrition</kwd></kwd-group><funding-group><funding-statement xml:lang="ru">Статья подготовлена в рамках фундаментальной научной темы «Разработка подходов к фенотипированию аутовоспалительных дегенеративных ревматических заболеваний на основе сравнительного изучения биохимических, иммунологических и генетических факторов, связанных с состоянием костной, хрящевой, мышечной и жировой тканей» № 125020501433-4</funding-statement><funding-statement xml:lang="en">The article was prepared within the framework of the fundamental research project “Development of approaches to phenotyping autoinflammatory degenerative rheumatic diseases based on a comparative study of biochemical, immunological, and genetic factors related to the state of bone, cartilage, muscle, and adipose tissues” (№125020501433-4)</funding-statement></funding-group></article-meta></front><back><ref-list><title>References</title><ref id="cit1"><label>1</label><citation-alternatives><mixed-citation xml:lang="ru">Dehlin M, Jacobsson L, Roddy E.
